01 Introduction to raw materials

Crucian carp

Chinese yam

Step 1: Buy fish and clean it
Crucian carp is very common in the vegetable market. We can buy a suitable size of Crucian carp according to our number. Let the boss clean up the scales and viscera of Crucian carp, and then go home for further treatment.
For further cleaning of crucian carp, we need to pay attention to the position of the black film on the belly of crucian carp. We need to wash it clean, rinse it with clean water constantly, and then take out the fish bubble to wash it.
Step 2: Wash and soak medlar for 10 minutes
We wash the wolfberry with clean water and soak it in warm water for at least 10 minutes after washing. At the same time, prepare ginger slices and scallions for subsequent use.
Step 3: Wash, peel and chop Chinese yam
The yam itself is very dirty, and there will be a lot of soil on it. First, we wash the yam, then use tools to cut the skin clean, cut it into small pieces and put it in water to soak. After a few minutes, we open fire, boil the cold water and turn off the fire
Step 4: Fried crucian carp, zizizi~
Heat a clean oil pan, put in a proper amount of oil, and stir fry ginger slices first, then put the crucian carp down and fry it for 3 minutes on the front and 3 minutes on the back, just a little yellow.
Step 5: Introduce yam liquid, turn down the heat and cook for 20 minutes+20 minutes
After frying the crucian carp, directly introduce the yam from step 3 into the oil pan, turn the heat to low, cover it, and cook it for 20 minutes. Next, add Chinese wolfberry and green onion, continue to simmer for 20 minutes, and you can take it out of the oven.
Step 6: Separate soup and fish
I used to fish out crucian carp and put it in a separate container. In fact, there are many small bones in the tail of crucian carp. If I accidentally get it into the soup, I will feel uneasy to drink it, so I will take the fish out and eat it slowly.
